Farmstead cheesemaking enables us to see and experience the relationship between the feed that we grow, the animals we care for and the milk they produce, and how it creates a high quality, good tasting cheese.
Important Steps
1. It all starts with our cows, milked by our robotic milking system, which allows them to be milked on their own schedule while ensuring consistent, high-quality milk.
2. That fresh milk travels straight from the dairy parlor to the creamery through a pipeline while it’s still warm, so we can move directly into pasteurization without delay.
3. We add cultures to begin developing the flavor profile of each cheese.
4. Rennet is introduced to coagulate the milk, forming curds.
5. Finally, each batch is hand-salted to enhance flavor, texture, and overall quality—bringing our farmstead cheese to life from start to finish.
