Ridiculously Good Cheese Curds

Meet the playful kid of the cheese world - buttery, squeaky, and wildly snackable. These curds bounce between your teeth like new sneakers on a gym floor, bursting with fresh, full flavor in every bite. Made right on our farm at Redhead Creamery, we pipe milk straight from the milking parlor to our cheese room, where it’s slowly pasteurized and gently crafted into the most irresistible curds around. Pick them up fresh from our farm store, your local food co-op, or cheese counter - just ask for them by name. Keep them cold in their vacuum-sealed bag, then bring them to room temp before serving for the ultimate squeaky experience.

Lucky Linda Clothbound Cheddar

This is the cheddar with a story - bold, rustic, and full of heart. Aged for at least 6 months in our underground cheese caves, Lucky Linda develops rich caramel-savory notes that taste like the crispy edges of a grilled cheese sandwich you’d fight over. Wrapped in cloth and aged with care, it takes on the wild molds in the air of our farm, creating a rind and flavor that's truly one-of-a-kind.
Named after our co-founder Alise’s mom (and the "luck" that kept Redhead Creamery going through tough times), Lucky Linda is the kind of cheddar Grandma would’ve stashed in the pantry for only the most special guests. Earthy, smooth, and slightly crumbly - it’s the storyteller at your cheese board, ready to make an impression.

Little Lucy Brie
The gentle hug of the cheese world - soft, melt-in-your-mouth, and comfortingly rich, like warm toast with cream or a gooey marshmallow by the fire, only savory and sophisticated.
Named after Alise and Lucas’s daughter, Lucy, this small brie is as charming and irresistible as its namesake. Smooth and creamy at its core, Little Lucy is perfect as a shareable appetizer - whether baked with pistachios and balsamic, warmed on the grill, or simply enjoyed as-is at room temperature.
As it ages, it becomes creamier and more flavorful, softening from the outside in. Whether you prefer it young and mild or rich and ripe, Little Lucy always leaves you wanting just one more bite.

This cheese continues to ripen (or gets creamier) as it ages. Depending on your taste, enjoy the Little Lucy Brie while young for a more grassy, light mouth feel. If you like it a bit more stinky and creamy, let it ripen in your fridge a little longer (1–2 weeks). It will continue to ripen from the outside in and will be soft and gooey at room temperature.
North Fork Whiskey Washed Munster

The rebel cousin of the cheese family - funky, rich, and unapologetically creamy, like buttered popcorn that quit its day job and joined a rock band.
Named after our home township and the North Fork of the Crow River, this French-style munster is washed in local Minnesota 14 Whiskey from Panther Distillery, giving it a bold, briny edge and that perfectly pungent funk we’re known for. Wrapped in muslin to keep its ooey-gooey paste in place, this cheese isn’t shy - and we love it that way.
Over time, the center gets creamier, the flavor deeper, and the rind beautifully wild. Mold on the rind? Totally normal - slice off the top and scoop out the good stuff. Best served at room temp for maximum ooze and attitude.

Similar to the Little Lucy, North Fork will continue to ripen and get creamier as it ages. The middle will become gooey with time and the flavor will increase in depth and pungency. Best served at room temperature.
Each wheel weights approximately 6oz and will serve 2-3 people.
Margie Cheddar

The crowd-pleaser with a sharp tongue. Margie is smooth, approachable, and just witty enough to keep things interesting - the kind of cheese you invite to every gathering. But don’t be fooled by her charm - this is the sharpest cheddar we make.
Aged to perfection and full of character, Margie is crumbly, bold, and may even sparkle with tyrosine crystals - those crunchy little bursts of flavor that cheese lovers dream about. Each bite offers a rich, savory experience with a hint of saltiness that only comes with age.
Named after Redhead Creamery sister #4, Maggie, who proudly describes herself as sharp, fruity, and just a little salty - Margie is the perfect centerpiece for any cheese board.
Pairs well with semi-dry to dry red wines or hoppy IPAs.

Henry's Havarti
Meet Henry’s Havarti- young, mild, and just the right amount of tangy. It’s named after Alise and Lucas’s son, Henry, and like him, this cheese is full of charm and easy to love. It melts effortlessly (kind of like your heart when a kid tells you a silly joke), making it perfect for grilled cheese, pasta salads, or stacked high on a sandwich. It's the kind of cheese that feels like comfort food with a smile- simple, familiar, and a little bit special.

The Barbarian
Named after Alise and Lucas’s son, Conan, The Barbarian may sound fierce, but underneath that bold name is a cheese with heart. Savory, robust, and full of character, it’s a mini wheel that knows how to make an entrance. Designed to be curled with a girolle into delicate cheese rosettes (yes, cheese can be fun and fancy), it’s the perfect centerpiece for a platter or a flavorful garnish on your favorite dish.
Much like its namesake, this cheese doesn’t hold back- but it also knows how to charm a crowd. Reminiscent of another Redhead favorite, St. Anthony, The Barbarian brings big flavor in a small, 1.5-pound wheel. Grab a girolle from our website, or dive in with a knife and your own sense of adventure.

Pimento Spicy Cheese Spread
The life of the party - creamy cheddar blended with smoky chipotle, sweet heat from Mama Lil’s peppers, our tangy Bovre cheese, and a touch of mayo magic. It’s that dangerously good dip that somehow disappears before you’ve even had a second bite.
Perfect straight from the fridge with crackers or melted and scooped with corn chips, this spread brings the heat and the charm. Bold, creamy, a little spicy, and totally addictive - it’s no wonder our Pimento Cheese is one of the hottest items in our farm store.
